On Friday October 12, Chef Nick Raitt and his team are taking over the kitchen at Penny Royal Wine Bar & Restaurant.
Forming the 3rd installment of our 2018 Pop Up Restaurant series, Nick is bringing high quality, contemporary dining into the heart of Launceston - an idea which was sparked by the Head Chef to allow diners to sample a formal degustation in a wonderfully convenient location.
The last two dinners have sold out in advance, with Launcestonians jumping at the chance to dine in style on a Friday night just moments from their doorstep.
Back in August 2018, Nick and his team produced the following creations;
A cup of winter vegetable broth with spelt toast crostini on arrival
1 – Fresh Stanley bay scallops, seared and served with almond butter, breadcrumbs and lemon
2 – Twice cooked pecorino and walnut souffle, onion and pancetta soubise, fennel, baby herb salad
3 – 100-day aged Pinnacle scotch fillet rubbed with herbs and bush pepper, chilli roasted mushrooms and eggplant, creamed polenta and crispy kale (served for the table to share)
4 – Gingerbread mascarpone, mandarin, white chocolate, marmalade, cocoa nib meringue
Diners on the night were blown away with the originality, quality and flavours which they experienced and Nick has promised to produce a seasonal selection of unique tastes and concoctions this time around.
