Winemakers Notes
Grapes are whole-bunch pressed and the juice is transferred to stainless steel tanks. Fermentations starts immediately and is kept cool to retain aromatics. Partial juice solids are retained (ie the fermenting juice is cloudy) for fermentation to give richness and texture. Stabilisation, clarification and bottling occurs quickly to retain freshness and zest.
