Alcoholic fermentation takes place in a
stainless steel tank with no malolactic
fermentation to retain high levels of
natural acidity and freshness,
The wine is tiraged and sent to second
fermentation following the traditional
method. Upon completion, it spends 18
months aging on yeast lees to build
complexity and texture whilst retaining
crisp, fresh flavours.
